Keto Chicken Cashew Casserole



A delicious and comforting Keto casserole packed with chicken, vegetables, and crunchy cashews. Perfect for a cozy dinner.

Ingredients:

  • 1 lb chicken breasts, cooked and diced
  • 1 cup cauliflower rice
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped mushrooms
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup cashews
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions:

Preheat oven to 375F 190C

In a skillet, heat olive oil over medium heat

Saut garlic, onion, celery, bell pepper, and mushrooms until tender

Add cauliflower rice and diced chicken to the skillet

Stir well to combine

Pour in chicken broth and heavy cream

Season with thyme, salt, and pepper

Simmer for 5 minutes

Transfer the mixture to a casserole dish

Top with cashews and grated Parmesan cheese

Bake in the preheated oven for 20-25 minutes or until the casserole is bubbly and golden brown on top

Serve hot and enjoy!

Quinoa Avocado Fries with Basil Ranch Dressing



A delightful and healthy twist to traditional fries using quinoa and ripe avocados, paired with a flavorful basil ranch dressing.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 ripe avocados, sliced into fries
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions:

Cook quinoa according to package instructions and let it cool

In a bowl, mix breadcrumbs with garlic powder, onion powder, salt, and pepper

Dip avocado slices in beaten eggs, then coat them in the breadcrumb mixture

Heat oil in a pan over medium heat and fry avocado fries until golden brown

Remove and drain on paper towels

For the basil ranch dressing, blend basil, Greek yogurt, mayonnaise, lemon juice, Dijon mustard, minced garlic, salt, and pepper until smooth

Serve quinoa avocado fries with basil ranch dressing on the side

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 cup Greek yogurt
  • Maple syrup optional
  • Cooking spray or oil for waffle iron

Instructions:

Preheat your waffle iron according to the manufacturer's instructions

In a large mixing bowl, combine the whole wheat flour, rolled oats, brown sugar, baking powder, baking soda, and salt

Mix well

In another bowl, whisk together the buttermilk, applesauce, egg, and vanilla extract until well combined

Sweet Potato Fritters with Guacamole and Poached Egg



These Sweet Potato Fritters with Guacamole and Poached Egg are a perfect combination of flavors and textures. Crispy sweet potato fritters are topped with creamy guacamole and a perfectly poached egg, creating a satisfying and nutritious meal that's perfect for any time of day.

Ingredients:

  • 2 medium sweet potatoes, grated
  • 1/2 red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1 tsp cumin powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 ripe avocados
  • 1 lime, juiced
  • 2-4 large eggs
  • 1 tbsp white vinegar
  • 2 tbsp olive oil
  • Fresh cilantro leaves for garnish

Instructions:

Place the grated sweet potatoes in a clean kitchen towel and squeeze out any excess moisture

In a mixing bowl, combine the grated sweet potatoes, chopped red onion, minced garlic, all-purpose flour, egg, cumin powder, paprika, salt, and pepper

Mix until well combined

In a separate bowl, mash the ripe avocados and mix in the lime juice

Season with salt and pepper to taste

This is your guacamole

Heat olive oil in a large skillet over medium heat

Scoop a spoonful of the sweet potato mixture and form it into a patty
