Ingredients:
- 2 medium sweet potatoes, grated
- 1/2 red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 egg
- 1 tsp cumin powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 ripe avocados
- 1 lime, juiced
- 2-4 large eggs
- 1 tbsp white vinegar
- 2 tbsp olive oil
- Fresh cilantro leaves for garnish
Instructions:
Place the grated sweet potatoes in a clean kitchen towel and squeeze out any excess moisture
In a mixing bowl, combine the grated sweet potatoes, chopped red onion, minced garlic, all-purpose flour, egg, cumin powder, paprika, salt, and pepper
Mix until well combined
In a separate bowl, mash the ripe avocados and mix in the lime juice
Season with salt and pepper to taste
This is your guacamole
Heat olive oil in a large skillet over medium heat
Scoop a spoonful of the sweet potato mixture and form it into a patty
Place it in the hot skillet and flatten it slightly with a spatula
Repeat with the remaining mixture, cooking the fritters in batches if necessary
Cook the sweet potato fritters for about 3-4 minutes on each side, or until they are golden brown and crispy
Remove them from the skillet and drain on paper towels
In a large saucepan, fill it with water and bring it to a gentle simmer
Add white vinegar to the simmering water
Carefully crack an egg into a small bowl and gently slide it into the simmering water
Poach the egg for about 3-4 minutes for a runny yolk or longer for a firmer yolk
Remove with a slotted spoon and place it on a paper towel-lined plate
Repeat with the remaining eggs
To assemble, spread a generous spoonful of guacamole on each sweet potato fritter
Top with a poached egg and garnish with fresh cilantro leaves
Serve the Sweet Potato Fritters with Guacamole and Poached Egg immediately
