Whole-Grain Waffles with Sliced Strawberries and Yogurt



These waffles made with whole grains are a healthy and tasty way to start the day. For extra fiber and health, they are made with whole wheat flour and rolled oats. Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1 cup Greek yogurt
  • Maple syrup optional
  • Cooking spray or oil for waffle iron

Instructions:

Preheat your waffle iron according to the manufacturer's instructions

In a large mixing bowl, combine the whole wheat flour, rolled oats, brown sugar, baking powder, baking soda, and salt

Mix well

In another bowl, whisk together the buttermilk, applesauce, egg, and vanilla extract until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; it's okay if there are a few lumps

Lightly grease the waffle iron with cooking spray or oil

Pour the waffle batter onto the preheated waffle iron, using the recommended amount for your specific iron

Close the lid and cook according to the manufacturer's instructions until the waffles are golden brown and crispy

Carefully remove the waffles from the iron and keep them warm in a low oven while you prepare the toppings

To serve, top each waffle with a generous dollop of Greek yogurt and a handful of sliced strawberries

Drizzle with maple syrup if desired
